Those are many questions that need long answers. 🙂 I'll glad to help but a slow pace. Let's begin with question 1. Those empty boxes on the variable tab can be used to modify the value of the variables listed on the left. The white dot means the value will be changed when 'entering' into the block from the top input white dot. Please notice that all blocks have a white input dot on top. The other two output dots (orange and yellow) mean the variable will be changed after the block settings have been executed and the action is passed to the following block either from the orange or yellow output dot. Again, please notice all blocks have got an orange output dot and most also have a yellow one.

@l-andorrà ok thanks bro. got it. but one last question, is the variable will only be changed at that specific block where you adjusted it??? or it will keep on storing that changed value?

You can do both. You can store new information into the variable or modify the previously existing value there. And yes, that will happen on the block you are using the 'variables' tab.

@l-andorrà so technically, its purpose is to lessen the usage of blocks like formula and modify variables if the purpose is only to change its values?

@l-andorrà so how should I use it? should I input the variable name or just the code like C1 and V1?

You need to ise de code only. Imagine your variable 'LossCount' in the image is to be modified. You can type the following on the orange output box: V8+1. You will need to type everything manually on this tab. That means this variables will be adding +1 to its current value AFTER any calculation happened on this block. Please notice tha orange dot is an output. What you selected on that block will be executed and THEN, the variable will be modified before arrivint to the next block.
